Long before Kneed a Noodle opened its doors, a woman named Lucia spent her mornings in a small sunlit kitchen in Northern Italy. She would knead dough with her bare hands, humming softly as the scent of flour and olive oil filled the air. Each strand of pasta she made carried the love she felt for her family — a love that traveled across oceans when her grandson Marco brought her recipes to Texas.
What began as Sunday dinners soon became a local dream — a pasta shop built on family, patience, and the simple belief that food made by hand tastes like home.
